Ricotta is an Italian whey cheese, made from sheep or cow milk whey left over from the production of cheese.

Forza fimmineddi tutti ccà!
Vi nni dugnu una di cavagna bona,
Frisca è la ricotta di bontà.

Eccu la zza Tana s'affaccia,
Voli la cchiù grossa in virità.
Idda si nni 'ntendi di cavagni boni
Picchì idda canusci la mè qualità.

Ogni matina la zza Tana
Si fa vidiri in suttana,
Poi mi dici:
"Ricuttaru comu a ttia nuddu c'è!"
'Stu cumplimentu
Tantu mi fa sensu
Ca perdu la testa
E nun arraggionu cchiù!
'Nveci di una
Ci nni dugnu deci,
Quantu si sazia e nun parla cchiù.

Eccu ca si senti e agghiri ddà,
'Na vuci ca chiama: "Veni ccà!
Dammi 'na cavagna ppi mè figghia Rosa
Ca mangia ricotta a volontà".

Tutta la ricotta si sparda,
Tutta la zza Tana s'a mangia.
Fimmina amurusa comu chista donna
Ci nni sunnu picca in virità.

I'll give you one complete package,
The ricotta is fresh and good.

Here the aunt Gaetana is looking out,
She wants the biggest packet.
She takes many complete packets
Because she knows the quality of my ricotta.

Every morning the aunt Gaetana
Looks out in dress
And then she tells me:
"Such seller of ricotta like you there's nobody else!"
This compliment
Means so much to me
That I lose my head
And I don't understand anymore!
Instead of one packet
I give her ten ones,
She's so glad and doesn't speak anymore.

There I hear her and I go there,
Her voice calls me: "Come here!
Give me one packet for my daughter Rosa
Who eats the ricotta with pleasure".

All the ricotta is eaten,
All is eaten by aunt Gaetana.
Such lovely as this woman
There's a little, in fact!

Every morning the aunt Gaetana
Looks out in dress
And then she tells me:
